Egg White Vegetable Frittata Recipe from Aulani with Macadamia Nut Pesto

You can choose to indulge in a fantastic breakfast buffet at Makahiki, dine on classics and island specialities at ‘AMA‘AMA, or just pick up light breakfast items from Ulu Cafe. You can even have breakfast delivered to your hotel room through room service!

Aulani’s talented chefs created an island-inspired frittata with egg whites and vegetables, topped with a homemade macadamia nut pesto and cheese and it is delicious! Check out the cooking demo video and full recipe for the egg white vegetable frittata recipe from Aulani below. Enjoy!

Egg White Vegetable Frittata Recipe from Aulani with Macadamia Nut Pesto
Serves 4

MACADAMIA NUT PESTO
1 cup tightly packed basil leaves
3 tbsp. grated parmesan cheese
1 tbsp. chopped macadamia nuts
2 cloves garlic
6 tbsp. olive oil
Salt, to taste
Pepper, to taste

EGG WHITE FRITTATA
1 tbsp. butter
2 tbsp. olive oil
1/4 cup diced eggplant
1/4 cup diced onion
1/4 cup diced mushroom
1/4 cup diced zucchini
1/4 cup diced artichoke heart
1/4 cup diced tomato
16 egg whites
1 cup shredded mozzarella cheese
1/4 cup goat cheese
1/2 cup basil pesto

FOR MACADAMIA NUT PESTO:

  1. Combine all ingredients in the bowl of a food processor. Pulse until smooth.
  2. Add salt and pepper to taste. Set aside.

FOR EGG WHITE FRITTATA:

  1. Preheat oven to 350°F. Grease four (8-ounce) individual casserole dishes with butter. Set aside.
  2. Heat olive oil in a medium sauté pan for 5 minutes, until hot.
  3. Sauté eggplant in the oil for 2 minutes. Add onion and cook for 3 minutes, until it begins to soften.
  4. Add mushrooms, zucchini, artichoke heart, and tomato and sauté for 2 minutes. Remove from heat.
  5. Place 4 egg whites in each casserole dish. Add 1/4 of the vegetables to each dish.
  6. Bake for 20 minutes, until eggs are set.
  7. Top each frittata with 1/4 cup of mozzarella, 1 tablespoon of goat cheese, and 2 tablespoons of pesto. Bake for 3-5 minutes, until cheese begins to brown.

Four Dining Options, Five Stores, and More Planned for Batuu at Star Wars: Galaxy’s Edge

Disney has finally announced the dates that we’ve all been waiting for! Star Wars: Galaxy’s Edge will open at Disneyland Park on May 31 and at Disney’s Hollywood Studios on August 29, 2019!

Batuu is the home of Black Spire Outpost, the location you will visit when you arrive at Star Wars: Galaxy’s Edge, which has become a haven for the galaxy’s most colorful — and notorious — characters.

Docking Bay 7 Food and Cargo – A multi-purpose transport shuttle docked on top of the large hangar will beckon guests into this fast-casual restaurant, a designated location for traveling food shuttles. Chef Strono “Cookie” Tuggs is in much demand for his culinary skills, so he moves from site to site in a modified Sienar-Chall Utilipede-Transport that becomes a mobile kitchen and restaurant – like an intergalactic “food truck.” His travels across the galaxy allow him to fill his pantry with exotic ingredients he uses to make new and unusual dishes inspired by the fare he created during his time working for Maz Kanata in her castle on Takodana. Now, “Cookie” is proud to share his cuisine with visitors at Tuggs’ Grub, a “traveling diner for diners traveling.”

Cookie’s food shuttle, now docked on the roof of the hangar bay, has lowered a series of pods into the hangar, carrying precious cargo – Chef Tuggs’ finest ingredients gathered from across the galaxy. Situated inside Docking Bay 7, other pods from Black Spire Outpost provide other produce, provisions, and equipment for all incoming freighters to the hangar. Guests may choose to dine indoors in the hangar bay or outside in a shaded courtyard.

Star Wars: Galaxy’s Edge will feature innovative and creative food and beverage offerings that enhance the immersive storytelling of the various dining establishments located in Black Spire Outpost. Throughout the outpost, guests will encounter familiar flavors but sometimes with unexpected and surprising colors and textures. The unique presentation takes Docking Bay 7 Food and Cargo to the next galaxy.

One of the new dishes that you’ll be able to try at Docking Bay 7 Food and Cargo is the Ithorian Garden Loaf, a plant-based “meatloaf” that comes served with roasted vegetable mash, seasonal vegetables, and mushroom sauce.

Another hearty option at Docking Bay 7 Food and Cargo is the Smoked Kaadu Ribs. These country sticky pork ribs come with a unique blueberry corn muffin and cabbage slaw.

Ronto Roasters – A recycled podracing engine fires up a spit of exotic meats, meticulously turned by a former smelter droid, 8D-J8. Guests can even sample some of the tasty Ronto fare.

Milk Stand – The place to go to get your farm-fresh blue milk or green milk, direct from Bubo Wamba Family Farms.

Kat Saka’s Kettle – One of the many street market stalls, this grain vendor sells the ever-popular Outpost Mix (sweet and salty popcorn snack with a hint of spice).

Savi’s Workshop – Handbuilt Lightsabers – Guests come to the workshop to meet with the Gatherers – a secretive group of people who have dedicated their lives to restoring balance in the galaxy by passing on their knowledge of Jedi lore and the Force. The workshop Master guides guests to customize and build their own unique lightsabers, and instructs them on the ways of the Jedi.

Droid Depot – Visitors to Mubo’s workshop can choose parts and construct their own individual astromech droids to accompany them on their journey, and then take them home with them.

First Order Cargo – A spaceport hangar bay serves as the temporary base and landing spot for the First Order. First Order officers have brought in crates of gear, uniforms and other supplies to win the hearts and minds of locals and visitors to Black Spire Outpost.

Resistance Supply – Resistance members and local sympathizers oversee a makeshift stall that supplies Resistance uniforms, pins, badges, hats, helmets, jackets, maps, tools, training supplies, food rations and other items.

There are also several market stalls which sell a variety of merchandise such as:

  • Toydarian Toymaker (toys)
  • Creature Stall (interesting critters that you can take home with you)
  • Black Spire Outfitters (clothing)

Three special Mediterranean cruises from Rome offer a selection of destinations in Greece, combined with visits to other notable cities in the region. Spring is upon us and that means the 2019 Epcot International Flower & Garden Festival is about to begin! Starting March 6, join us for fun, flowers, and most importantly, FOOD! This year’s festival features 17 Outdoor Kitchens and several other locations through the park that will be offering delectable festival bites and libations.

Special dining packages are also available for the Garden Rocks Concert Series. This concert series runs for 90 nights and features over 270 performances by tons of popular artists. This dining package allows you to have either breakfast, lunch, or dinner at nearly any table-service restaurant in the park and grants you guaranteed seating at one of three concert performances that day. SIGNATURE EVENTS
The festival’s signature events are also experiences worth checking out! One of my favorites is Sweet Sundays, which is returning this year. This popular event makes for a sweet start to your day, allowing you to join a celebrity pastry chef for an entertaining dessert-centric demonstration, an interview with the chef, and a light brunch buffet featuring one of the chef’s dishes! If you’ve ever wanted to hone your pastry and baking techniques and indulge in yummy desserts, this is definitely the event for you. This event occurs on select Sundays from 11 a.m. to 1 p.m. at the Palisades Stage in Paradise Gardens Park for the duration of the festival, and space is limited, so be sure to make your reservations today!

That’s right, Tangaroa Terrace Tropical Bar & Grill has officially reopened at the Disneyland Hotelat the Disneyland Resort! After an exciting refurbishment, the fast-casual restaurant has a vibrant new look, expanded offerings and is back and serving up made-to-order dishes, signature tiki cocktails, Dole Whip and more!

Tangaroa Terrace, inspired by Walt Disney’s Enchanted Tiki Room, is the perfect tropical complement to the mid-century modern architecture of the Disneyland Hotel. This island paradise combines traditional motifs from many Pacific islands such as Hawaii, Tahiti, Fiji, Sumatra and New Guinea. Inside, new décor details feature a colorful tropical mural with “hidden” tiki room birds (can you find them all?), bamboo accents, exotic stone countertops and glass fish net float lights, with open air views of the pool. Outdoors, guests enjoy an expanded new patio with brightly colored rattan lounge chairs, tiki bar stools and a communal table for fun, inviting ways to enjoy sunshine and the island vibes.

Throughout the day, guests can snack on freshly prepared hot and cold dishes all day long. For breakfast (served until 11am), chow down on a classic Breakfast Platter with scrambled eggs, bacon, and hash browns or bite into a Breakfast Sandwich with kālua-style pulled pork, fried egg, hash browns, and gravy. Sweet options include the Açai Chia Breakfast Bowl with seasonal fruit and granola and Pineapple Upside Down Pancakes. One of my FAVORITE breakfast dishes of all time can also be found here – Tangaroa Toast! This brick toast comes coated in cinnamon sugar, and topped with bananas Foster, whipped cream, bananas, and toasted coconut.

If your mouth is watering from the breakfast menu, just wait until you feast your eyes (and taste buds) on the lunch and dinner menu! Sharable options include dishes such as the Kālua-style Poutine (crispy crinkle fries topped with pork, cheese curds, gravy, pickled onions, and Fresno chiles – YUM) and the Pu Pu Platter, which is another one of my favorites! The platter comes with Chili-Garlic Edamame, Pork Gyoza (pork and vegetable pot stickers), Sweet-and-Spicy Chicken Wings, and Panko-crusted Long Beans served with togarashi aïoli; all four can also be ordered individually. And if nachos are more your style, you can snack on the Shipwreck Nachos topped with kālua-style pulled pork, pineapple salsa, hoisin sauce, togarashi aïoli, and barbecue sauce.

And of course, you can’t go wrong with the Chili-Garlic Edamame (it’s included in the Pu Pu Platter, but you know you’re going to want more!) – young soybeans steamed and tossed with chili-garlic sauce – or even the Fried Spam Musubi served with teriyaki sauce!

Other dishes include a Lentil Garden Bowl with brown rice, cucumbers, cherry tomatoes, and onions tossed in coconut curry; the Tangaroa Salad with sautéed shrimp; and an Angus 1/3 lb. Hawaiian Cheeseburger served with grilled pineapple, Applewood-smoked bacon, Havarti cheese, togarashi aïoli, and teriyaki sauce.

Kids can enjoy their own smaller-portioned versions of these tropical bites. For breakfast, the Kid’s Breakfast Platter and the Kid’s Pineapple Upside-Down Pancake are great options. They can even get the Kid’s Mickey-shaped Tangaroa Toast! All three dishes are served with turkey bacon and fresh fruit. For lunch and dinner, the kiddos can munch on a yummy Grilled Salmon Bowl, a Kid’s Cheeseburger, and the ever-so-popular and tasty Chicken Breast Nuggets.

The restaurant also offers a newly-enhanced marketplace for grab-and-go pastries and snacks, specialty coffees, pineapple Dole Whip soft serve, Dole Whip floats and Dole Whip floats with a splash of rum, plus a full bar of island cocktails. “Tangled: The Musical” (Disney Magic)

At last we see the light…only on the high seas! The animated Disney film “Tangled” comes to life on stage as the first adaptation of the endearing story we all love. We assembled an all-star creative team to develop this original Disney Cruise Line stage spectacular, which includes three new songs created exclusively for the show by Academy Award-winning composer Alan Menken and Grammy Award-winning lyricist Glenn Slater, along with pioneering puppetry created by master puppet designer Michael Curry.

New to the Disney Fantasy is the Broadway-style production “Disney’s Aladdin – A Musical Spectacular.” The live stage show, performed in the 1,340-seat Walt Disney Theatre, features the cast from the classic animated Disney film, “Aladdin,” in a fast-paced musical comedy. “Twice Charmed: An Original Twist on the Cinderella Story” (Disney Magic)

What if Cinderella never got a chance to slip on the glass slipper? Beginning where the classic film ended, “Twice Charmed” is a fresh new take on an original Disney story. This new musical combines pop and rock ‘n’ roll elements to create an enchanting score, featuring six original songs as well as classics like “Bibbidi-Bobbidi-Boo” and “A Dream is a Wish Your Heart Makes.”
