10 Reasons to Celebrate the Holidays at Universal Orlando Resort
The holidays are an extra special time to visit the theme parks. One of my favorite things to do this time of year is visit the theme parks. You may ask, what happens at Universal Orlando during the holidays? You can enjoy gorgeous weather, roller coasters, incredibly fun holiday festivities and so much more during holidays at Universal Orlando Resort. Although things do look a bit different this year than in past years (as expected), you can still get in the spirit and celebrate the holidays at Universal Orlando Resort.
When Christmas time comes to The Wizarding World of Harry Potter, the land embraces the holiday season with spellbinding decorations, holiday entertainment, and the can’t-miss hot Butterbeer.
Twinkling lights and enchanting strands of garland and wreaths adorn the eaves and shop windows throughout Hogsmeade and Diagon Alley. Make sure to take a close look as each shop’s decorations are uniquely themed (even Knockturn Alley gets festive with a wreath).
You can’t celebrate properly without tuning in to hear Celestina Warbeck and the Banshees perform their holiday hits like “My Baby Gave Me a Hippogriff for Christmas” (my personal favorite) in Diagon Alley. Over in Hogsmeade, the Hogwarts Frog Choir is taking the stage with their classic carols like “Christmas at Hogwarts”.
Take home a piece of the wizarding world with marvelous merchandise like Hogwarts house ornaments, stockings, and sweaters.
Hot Butterbeer: This seasonal drink has the same creamy flavor reminiscent of shortbread and butterscotch you know and love. It’s perfect for warming you up when the weather gets chilly.
See the New Universal’s Holiday Experience Featuring Macy’s Balloons
Although Universal’s Holiday Parade featuring Macy’s won’t be making its way through the streets of Universal Studios Florida this year, you can see the balloons and floats up close like never before in this new walkthrough experience. See the larger-than-life Macy’s balloons and floats depicting holiday moments inspired by favorite films like Illumination’s Despicable Me, and DreamWorks’ Shrek and Madagascar. And say goodbye to waiting in long lines at the mall — Santa Claus is coming to Universal Studios. Dress in your holiday best and come get a (socially distanced) photo with Santa during this holiday experience.
Universal’s Holiday Tour: Get front of the line access and walking tour to the balloon experience with this add-on experience. You also get a private meet and greet with the Grinch while enjoying a hot cocoa bar, an exclusive viewing of The Magic of Christmas at Hogwarts Castle, and a tour of the Tribute Store.
Meet Your Favorite Characters
After meeting the holly, jolly man in the red suit, head over to Universal’s Islands of Adventure to meet the mean, green one himself, the Grinch. You can find him and the Whos spreading holiday cheer — or grumpiness in the Grinch’s case — throughout Seuss Landing.
You can also join other holiday characters for some dancing, singing, and photos in the streets of Universal Studios. Join in on the merry and mayhem with characters like the Minions and other beloved characters from Illumination’s Despicable Me, and DreamWorks favorites like the family of Shrek and King Julien and crew from Madagascar.
Don’t worry, Universal’s other famous characters aren’t taking off for the holidays. You can still meet the towering Transformers robots in Universal Studios and encounter Jurassic World’s Blue at Raptor Encounter in Islands of Adventure.
Enjoy Holiday Decor and Festivities at Universal’s Hotels
Make your holiday vacay at Universal Orlando complete with a stay at one of the resort hotels (don’t worry, you can reassure the kiddos that Santa can still find you). Besides being a short walk, Water Taxi, or shuttle ride to the theme parks, the hotels get in on the holiday festivities, too.
Do the hotels decorate? You betcha. Each hotel has a uniquely themed tree in the lobby and hundreds of lights, garland, and wreaths throughout. Just walking in to check in at the front desk will immediately put you in good spirits with the warm ambiance and holiday tunes filling your ears.
Nothing screams winter snuggles like cuddling up in front of a fire. The hotels have fire pits they light nightly, which is the perfect way to wind down after a day in the parks.
OK, so pools aren’t exactly a “holiday” activity, however, in Florida they might as well be. The fact you can lounge by the hotel pool in the middle of winter with an umbrella drink is the best gift you could give in my opinion.
Come Do Your Holiday Shopping
Another great perk about coming to celebrate at Universal? You can do your shopping at the same time, too. We’ve got a ton of unique themed gift shops throughout our entire resort destination. You can find popular finds, including some of my favorites like a classic Jurassic Park T-shirt, an interactive wand to cast spells in The Wizarding World of Harry Potter, and basically any piece of merch with the Grinch’s face on it.

My favorite part about the holidays, as my waistband can attest to, is the food. With elaborate feasts, endless amounts of sugary treats, and the excuse to have as much hot cocoa as I want, I live for the holiday food and drinks.
New this year is the Holiday Treat Trail. Grab a trail brochure, gather your treat stamps, and enjoy favorites like the holiday ornament doughnuts at Voodoo Doughnut. Once you finish, you get a special completion treat on us!
Stop by the Holiday Tribute Store to try holiday treats and snacks you can only get from Earl the Squirrel’s Tree Farm.
Universal CityWalk is the place to get whimsical holiday goodies like eggnog cocktails, Peppermint Beignet Sundae from Pat O’ Brien’s, the savory Caribbean dish of Brown Stew Chicken from Bob Marley – A Tribute to Freedom, and more.
As I mentioned above, if you’re looking for a full holiday feast, look no further than Universal Orlando’s hotels.
Gingerbread Milkshake: It’s the very definition of Christmas in a cup. This milkshake from The Toothsome Chocolate Emporium & Savory Feast Kitchen has gingerbread, vanilla soft serve, caramel, cinnamon, chocolate ganache, and topped with a gingerbread-man cookie.
Take Advantage of Florida “Winter” Weather
Instead of having to worry about wearing extra layers of clothing, all you have to worry about is an extra layer of sunscreen. Florida “winter” is the perfect time of the year to get outside and enjoy cooler temperatures while soaking in that gorgeous sunshine. Nothing beats being able to lay out by the hotel pool in the dead of winter. Plus, less clothes packed also means more room for shopping goodies! If you’re really craving a brisk winter wind with a bite, I suppose you can ride Hollywood Rip Ride Rockit first thing in the morning…

Celebrating joyous holiday cheer from around the globe, the 2020 Taste of EPCOT International Festival of the Holidays presented by AdventHealth will run from November 27 through December 30, 2020. You will find a variety of yuletide decorations, live holiday music at various EPCOT stages, family-friendly activities, and, of course, the delicious food and beverage offerings at the Holiday Kitchens scattered throughout all 11 World Showcase pavilions and World Showplace.
The popular Holiday Cookie Stroll is back this year with yummy freshly baked cookies from the EPCOT bakery ovens. The Festival Passport lists the five official Holiday Cookie Stroll locations. Each stop will offer a delicious cookie for purchase and a stamp for your Festival Passport. Once you’ve collected all five stamps, bring your Festival Passport to the Sweets & Treats Holiday Kitchen to receive an adorable complimentary Minnie Peppermint Cookie! The Holiday Cookie Stroll can be completed at your own leisure, and you can even bring back your stamped Festival Passport to EPCOT at any time during the festival to complete your stroll.
In addition to all the cookies and decadent desserts at the festival, the EPCOT pastry chefs have been busy creating a Gingerbread Capital City! I am always so impressed with parents who can keep the secret while planning a surprise Disney vacation. Have you ever wanted to surprise your kids with a Disney World vacation, but just unsure the best way to do it? Whether it’s a first visit or a special celebration, it can be a lot of fun to plan a surprise Disney vacation. Here are ten different ways to give your kids a surprise Disney vacation!
1. Scavenger Hunt: You can hide clues throughout your home where they will eventually find the last clue revealing the big trip. You can even have them pick up small gifts at each stop to compile at the end. Some of the earlier clues can be more generic like sunglasses, new luggage, hats, and swim suits.
5. Letter from Mickey: You can make a letter from Mickey Mouse for your kids letting them know that you’ll be coming to visit. Or, if you book your Disney World vacation with us, we will send your family a letter from Mickey Mouse in addition to an autographed picture to help with your surprise.
6. Custom Shirts: You can reveal your surprise Disney vacation with new shirts! If you are crafty, there is plenty of inspiration on Pinterest or you can always order some from Etsy or Amazon.
7. Character Call: If you are sailing on a Disney cruise, you can schedule a FREE call prior to your sailing from Mickey, Goofy, or Mickey and Minnie together. This can be a great way to tell the kids about your cruise!
8. Surprise at the Airport: If your kids aren’t big enough to read, you may be able to make it all the way to the airport before having to reveal the big surprise. Imagine the look on their faces as you pull up and they see all of the airplanes coming in and out!
9. A Box Full of Balloons, Characters, and More: If you can get a big cardboard box, fill it with Disney inspired goodies like balloons, plush, confetti, and more. Your kids will love unwrapping it and opening it to find surprises with clues revealing your vacation.
10. Puzzle: You can make your own puzzle at home or order one from Shutterfly to reveal your special message telling your family about their surprise Disney vacation. You can also find a beautiful wooden puzzle for a Disney World vacation or a Disney Cruise Line vacation.

The Disney Wonder will return to the Hawaiian Islands in early 2022 for two special 10-night cruises: a voyage to Honolulu from Vancouver, Canada, on April 26, 2022 and a return sailing to Vancouver on May 6, 2022.
Guests will discover the breathtaking beauty of the Hawaiian Islands, including the famous beaches of Waikiki on Oahu; unforgettable views from high atop the summit of Haleakala Crater on Maui; the lush tropical gardens and waterfalls of Kauai; and the diverse natural wonders of Hawaii Island.
Even More Family Vacations from Florida
Vacationers can combine a Disney cruise getaway with a stay at Walt Disney World Resort in early 2022 with two ships sailing from Port Canaveral, Florida, and a third ship departing from Miami. Every cruise from Florida in early 2022 includes a visit to Disney’s private island paradise, Castaway Cay.
From Port Canaveral, the Disney Fantasy begins 2022 with a six-night Western Caribbean cruise, followed by seven-night voyages to a variety of favorite destinations in the Eastern and Western Caribbean.
The Disney Dream, also sailing from Port Canaveral, embarks on three- and four-night Bahamian cruises to Nassau and Castaway Cay. Offering even more fun in the sun, one special four-night cruise includes two stops at Castaway Cay.

Popular Tropical Destinations from Galveston and New Orleans
The Disney Wonder will offer Western Caribbean getaways early in 2022. Initially from Galveston, Texas, with four-night itineraries, followed by four- and six-night voyages from New Orleans.
A special six-night Bahamian voyage offered from both Galveston and New Orleans will give guests the opportunity to visit Castaway Cay, Disney’s private island paradise in the Bahamas, in addition to the lively beach town of Key West.
Baja Getaways from San Diego
The Disney Wonder will return to San Diego, California in March and April 2022 with cruises to Baja, Mexico, where you can enjoy vibrant culture, stunning beaches and exciting water activities.
Most sailings to the Baja peninsula call on the charming coastal city of Ensenada, known for its turquoise blue water and rugged mountainous terrain. A two-night cruise to Ensenada has a Friday departure from San Diego, giving you an amazing weekend getaway to experience world-class entertainment aboard the Disney Wonder.
Four- and five-night Baja cruises include a visit to Cabo San Lucas, Mexico, a popular destination with dramatic rock formations and white-sand beaches, or to Catalina Island, a tropical gem off the California coast with plenty of outdoor adventures and seaside charm.
Early 2022 Disney Cruise Line bookings will open to the public beginning October 22, 2020. Castaway Club members are eligible for early access.
Disney Wish Update
Although the Disney Wish was originally scheduled to sail in early 2022, its maiden voyage has been postponed to summer 2022 as a result of pandemic-related delays at the Meyer-Werft shipyard in Germany. The ship will be slightly larger than the Disney Dream and Disney Fantasy at approximately 144,000 gross tons and 1,250 guest staterooms.

Since Walt Disney World reopened in July, dining plans have been unavailable. This can make eating in the parks on a budget relatively difficult. Food is often the biggest expense of a Disney World vacation. So, today we want to share with you the most affordable table service restaurants at Disney World.
Inside the Theme Parks
Sci-Fi Dine-In Theater: The atmosphere is almost as good as the food at Sci-Fi Dine-In Theater in Disney’s Hollywood Studios. The whole family will love eating inside of a car at this old fashioned drive in movie theater. You can choose from burgers, pasta, sandwiches, chicken, and more, all $25 and under. If you’re looking for a treat, we also enjoy the desserts like their house-made candy bar, warm doughnut, and cookie shake.
The Plaza Restaurant: This charming parlor serves lunch and dinner inside Magic Kingdom Park at the end of Main Street, U.S.A.. You can try the home-style meatloaf, cheese steak sandwich, burger, or club sandwich for $22 or less! But, be sure to save room for dessert here. They have amazing seasonal milkshakes and delectable sundaes year round.
50’s Prime Time Cafe: You will feel like you really have traveled back to the 1950’s when you step inside of 50’s Prime Time Cafe at Disney’s Hollywood Studios. You’ll even have a chance to watch black-and-white clips from popular prime-time shows circa 1955 during your meal. All of the classics are on the menu- fried chicken, meatloaf, and pot roast. Or, just order the sampler to try a little of each. Just remember to keep your elbows off of the tables here.
Tony’s Town Square Restaurant: Tony’s Town Square Restaurant gets somewhat mixed reviews from guests, but we have had consistently good experiences there, as recently as October 2020. You can try pizza or a number of pasta dishes, with most being under $25 each. We recommend the shrimp alfredo or spaghetti!
Via Napoli Ristorante e Pizzeria: You’ll enjoy a culinary tour of Southern Italy when you dine at Via Napoli in EPCOT. The whole family can easily share one of these amazing, authentic Neapolitan style pizzas. Via Napoli was even voted Critic’s Choice for “Best Theme Park Restaurant” by Orlando Sentinel.
Nine Dragons Restaurant: Nine Dragons Restaurant is hidden in the China pavilion at EPCOT. You can enjoy Cantonese, Mongolian, Szechuan, Hunan and Kiangche-style specialties under the soft glow of Chinese lamps. The menu offers spare ribs, kung pao chicken, fried rice, pork belly, and so much more for $25 or less. Nine Dragons even offers a family dinner for $26 per guest which includes your choice of soup, select entrees, and dessert.
Disney Springs
Disney Springs has a lot of affordable table service restaurants, as far as dining on property goes at least. Most of them are rated “$$” on the Disney World website which indicates that their pricing generally ranges from $15 to $34.99 per person. Below, I have listed my favorite affordable table service restaurants at Disney Springs.
Splitsville Dining Room: Did you know that you can dine at Splitsville without having to bowl? They have a full menu including pizza, sushi, salads, sandwiches and more. You can enjoy six different 13-inch pizzas for less than $20 each! We also love their Macho Nachos for just $16 which can also feed two people! If you have a rainy day or time outside the parks, stop by for a delicious meal and even some bowling.
Chef Art Smith’s Homecomin’ Kitchen: Chef Art Smith’s Homecomin’ Kitchen is the ultimate spot for comfort food. They have some of the best fried chicken, macaroni and cheese, and sweet tea that I’ve ever had! You can enjoy any of their sandwiches, dinner salads, or kitchen (sampler) plate for under $20! They also offer a delicious weekend brunch on Saturday and Sunday from 9:30 am to 1:00 pm.
Rainforest Cafe: Rainforest Cafe is always a family friendly option where your kids will love the chance to journey into the Amazon, surrounded by animated animals to the sounds of thunder claps and sudden rainstorms. All of the sandwiches and burgers are under $20 in addition to some of the appetizers that could be served as a meal like the quesadillas, chicken strips, or pepperoni flatbread.
Planet Hollywood: You can dine among the stars at Planet Hollywood. The restaurant is full of movie memorabilia and TV’s of all sizes! You may just get to participate in a sing along during your meal. All of the burgers and sandwiches on the menu are under $20. Some of our other favorites include one of the biggest nachos we’ve ever tried, and the penne, chicken & broccoli pasta, each under $20, as well.
T-Rex Cafe: T-Rex is one of my favorite restaurants for families with boys because of the theming, including squawking pterosaurs, wooly mammoths, a massive undulating octopus and life-sized animatronic dinosaurs. Every 20 minutes, you’ll even get to experience a meteor shower, complete with rumbling and fiery “explosions.” You can enjoy burgers, quesadillas, flatbread pizza, and more for under $20.
City Works Eatery & Pour House: City Works Eatery & Pour House is Disney Springs’ newest dining establishment. It is located at the far end of the West Side, next to the NBA Experience. You can enjoy burgers, fish or chicken tacos, mac n’ cheese, or chicken wings here for under $20. This is also a great spot to watch your favorite game on TV.
Did you know that you are welcome to dine at any Walt Disney World Resort Hotel, regardless of where you are staying? You can visit other hotels and enjoy some of their delicious dining options and even shopping, in many cases.
Beaches & Cream Soda Shop: You may feel like you’ve traveled back in time when you visit this nostalgic soda shop at Disney’s Beach Club Resort. They have a full dinner menu with six burgers and sandwiches, each under $20. The real “star of the show” here though is the dessert! They serve hand-dipped ice cream, milkshakes, sundaes, and more. The most expensive item on the menu is the Kitchen Sink at $35, which easily serves four.
Bonus: Beaches & Cream also offers a to-go menu of ice cream and beverages, and you can even enjoy your treats at a poolside table outside, overlooking Stormalong Bay.
Sanaa: You can enjoy a delicious dinner with some incredible views of the animals on the savanna at Disney’s Animal Kingdom Villas- Kidani Village. Keep an eye out for gazelles, zebras, giraffes, kudu, ostriches, cranes and more as you dine. Don’t miss the Indian-style Bread Service appetizer which includes five breads and nine different dipping sauces.
Kona Cafe: Kona Cafe serves breakfast, lunch and dinner at Disney’s Polynesian Village Resort with a menu inspired by the South Seas. If you’re starting your day here with breakfast, you have to try the Tonga Toast, a banana stuffed french toast. During dinner, you can enjoy poke bowls, sushi, glazed chicken wings, or lobster and crab macaroni & cheese for under $20 each!
Olivia’s Cafe: Olivia’s Cafe is often considered one of the best hidden gems at Disney World. This nautical themed restaurant serves Key West inspired dishes like conch fritters, crab cake, sea scallops, shrimp pasta and more. You can try the Duval Street Burger, Conch Flats Club Sandwich, or any of the appetizers for under $20 each.
Grand Floridian Cafe: We think the Grand Floridian Cafe at Disney’s Grand Floridian Resort & Spa is another great hidden gem, especially for brunch. During breakfast and lunch, you can enjoy pancakes, Mickey-shaped waffles, eggs benedict, and more, each for less than $20. You’ll also enjoy a nice view of the gardens at the resort.

From November 6 through December 30, 2020, you will be able to enjoy festive décor, themed merchandise, seasonal food & beverage offerings and entertainment all across Walt Disney World Resort. Holiday magic will be in full force at the four theme parks and Disney Springs, and Santa Claus will make time for special pop-up appearances at each location, waving and exclaiming holiday wishes to all.

Guests will be delighted by the sight of festive flotillas at Disney’s Animal Kingdom, holiday promenades at EPCOT and merry motorcades at Disney’s Hollywood Studios. Character cavalcades at Magic Kingdom Park will take on a special holiday twist, with Christmas friends on festive floats in their holiday finest. Gingerbread Men? Check! Elves and Reindeer? Check, check! And, we can’t forget the Toy Soldiers, who will join the Main Street Philharmonic as they march through Magic Kingdom Park, bringing musical holiday cheer for all to hear.

When night falls, special projection effects will give a festive look to Cinderella Castle this year, providing a colorful backdrop for our guests’ photos. The appearance of the iconic castle will be transformed with a rotating series of designs including a whimsical Christmas sweater and a regal overlay of red, green and gold ornamentation. This will be in place of the Castle Dream Lights. Other holiday experiences that draw big crowds will be on hiatus this year as well, such as Mickey’s Very Merry Christmas Party and Candlelight Processional at EPCOT.

Of course, the holidays wouldn’t be complete without enjoying a meal among friends and family. Minnie Mouse will be hosting a yuletide gathering for all her friends at Hollywood & Vine at Disney’s Hollywood Studios starting November 6. Santa Goofy will be there, along with Minnie and more in their holiday best.
Over at Disney Springs, guests will discover Christmas around every corner as they come across a collection of elaborately-decorated Disney Christmas trees spread throughout this retail, dining and entertainment destination. In the evening, guests visiting areas within Town Center, West Side and The Landing will encounter a magical snowfall, adding an extra touch of wonder to their holiday shopping. And to top it off, Jock Lindsey will once again be turning his hangar bar into Jock Lindsey’s Holiday Bar complete with delightful holiday décor and a delicious limited-time menu filled with festive favorites.

Disney Resort hotels will also be decked out for the holidays, with their lobbies featuring iconic trees and other festive flourishes. However, guest favorite gingerbread displays will not return to any of the Walt Disney World Resort hotels this year due to physical distancing guidelines.
Starting a bit later in the 2020 holiday season at Disney World, highlights from the EPCOT International Festival of the Holidays will return on Friday, November 27. Holiday kitchens will be offered around World Showcase promenade with favorites like American Holiday Table featuring Slow-roasted Turkey with Stuffing and Bavaria Holiday Kitchen with dishes like Cheese Fondue in a Bread Bowl.

Guests can step inside World ShowPlace to enjoy the returning group, JOYFUL!, who present a journey through R&B, Gospel, contemporary and traditional Christmas and holiday music. Also, the Voices of Liberty will bring their incredible 8-part harmonies to the America Gardens Theatre stage for a special concert of favorite carols and songs of the season.

We all have favorite theme park snacks, right? It can be tough when you’re craving a butterbeer, but can’t stop by the Wizarding World of Harry Potter to pick one up. So, we have the next best thing! Make one at home! You can make these four amazing Universal Orlando Resort recipes at home to help get you by until your next Universal Orlando Resort vacation. Enjoy!
Butterbeer Recipe from the Wizarding World of Harry Potter
One of the most iconic snacks from the Wizarding World of Harry Potter or even all of Universal Orlando Resort is butterbeer. Butterbeer is served chilled, frozen, or warm (seasonally) inside of the Wizarding World of Harry Potter. You can find this sweet butterscotch flavored treat in the Three Broomsticks, Leaky Cauldron, Hog’s Head, and carts throughout the Wizarding World.
Ingredients:
1 cup light or dark brown sugar
2 tablespoons water
6 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon cider vinegar
3/4 cup heavy cream divided
1/2 teaspoon rum extract
4 bottles (12 oz. bottles) cream soda
Directions:
In a small saucepan over medium, combine the brown sugar and water. Bring to a gentle boil and cook, stirring often, until the mixture reads 240 F on a candy thermometer.
Stir in the butter, salt, vinegar and 1/4 heavy cream. Set aside to cool to room temperature.
Once the mixture has cooled, stir in the rum extract.
In a medium bowl, combine 2 tablespoons of the brown sugar mixture and the remaining 1/2 cup of heavy cream. Use an electric mixer to beat until just thickened, but not completely whipped, about 2 to 3 minutes.
To serve, divide the brown sugar mixture between 4 tall glasses (about 1/4 cup for each glass). Add 1/4 cup of cream soda to each glass, then stir to combine. Fill each glass nearly to the top with additional cream soda, then spoon the whipped topping over each.
To make your butterbeer most like the original version served in the parks, you will want to freeze this recipe since it served hot.

Fried PB&J with Bananas Sandwich Recipe from Halloween Horror Nights

Although Universal Orlando Resort will not be hosting Halloween Horror Nights in 2020, you can still enjoy a delicious treat from the nation’s premier Halloween event!
The first step to enoying these fried pb&j with bananas sandwich is to make the secret ingredient that makes this sandwich unbelievable… FUNNEL CAKE BATTER!
Funnel Cake Batter Recipe
Ingredients:
1 ½ cups of whole milk
2 large eggs
2 cups of all purpose flour
1 teaspoon baking powder
½ teaspoon kosher salt
Directions:
In a large bowl, mix the milk and eggs together.
In a separate bowl, combine the flour, baking powder, and salt.
Next, stir the bowl of dry ingredients into the large bowl of wet ingredients and mix until smooth.
Set aside for later.
Fried PB&J with Bananas Sandwich Recipe
Ingredients:
2 slices of thick cut, white bread
1 ½ tablespoons of creamy peanut butter
1 ½ tablespoons of grape jelly
½ banana sliced
1 teaspoon chocolate syrup
½ cup funnel cake batter
1 tablespoon of powdered sugar
Canola oil (I would get at least 48 oz.)
Directions:
Preheat a large, heavy bottomed pot or large fry pan with canola oil until it reaches 350 degrees (use a candy thermometer to check temp).
You can also use a dutch oven or stock pot to fry as well. Whatever floats your boat… or in this case, sandwich.
For the canola oil, you’ll want around 2 inches or so. You want to be able to fully submerge the sandwich in the oil.
If you don’t have a candy thermometer (which I did not), you can tell the oil is ready when it’s shimmering with a whiff of smoke.
Spread creamy peanut butter evenly on one slice of bread.
Spread grape jelly evenly on another slice of bread.
Pause to lick any peanut butter or jelly you may have gotten on your fingers.
Slice the banana and place onto the piece of bread with the peanut butter.
Close sandwich and submerge into the bowl of funnel cake batter until completely covered.
Place the sandwich into the preheated oil but be careful! I recommend using tongs or a large slotted spoon.
Fry until golden brown on both sides.
Remove from oil and place onto paper towels to absorb the excess oil.
Drizzle as much chocolate syrup as you’d like and garnish with powdered sugar. I love A LOT of chocolate as you can probably tell in the picture!
First, let’s get fancy and get a bunch of little bowls and divide all the ingredients up into them. Then, let’s get mixing!
Put the jalapeños in a large bowl (if you don’t like spiciness, skip this step.)
Carefully cut the avocado in half and discard the pit by inserting the blade into the seed using a quick and gentle cutting movement, then twist and remove. Gently scoop the avocado with a spoon and place in a bowl.
Add the red onion, tomatoes, cilantro, salt, and olives to the bowl.
Add a drizzle of olive oil.
Mash and mix all the ingredients together using the back of a large spoon or fork, then mix in the lime juice.
Shape it into a perfect little guac mountain and garnish with extra cilantro or tomatoes.
Get your favorite chips and get your guac on!
Blast the mariachi music, throw those chips in a bowl, and get that salt shaker ready. It’s time to fiesta!
Big Apple Grilled Cheese Recipe from TODAY Cafe

You can bring a taste of Universal’s comfort food to your home with the Big Apple Grilled Cheese recipe from TODAY Cafe. This fun twist on grilled cheese combines the savory flavors of melted cheesiness and tomatoes with the crisp sweetness of apples all in one sandwich. It’s a great lunch option for your kids or for the big kid that’s in all of us.
Ingredients:
2 slices of white bread
2 slices of cheddar cheese
2 slices of Swiss cheese
1 slice of pepper jack cheese
1 tablespoon roasted plum tomato
2 teaspoons unsalted butter
4 thin slices of Red Delicious apple
Directions:
Butter two slices of white bread with softened butter
Remove the core of the apple and cut into 4 wedges
Thinly slice one wedge of apple and set aside for later
Place bread butter side down into non-stick fry pan on medium heat
Begin to build the sandwich by laying the pepper jack and Swiss cheese on one slice
Allow the cheese to begin to melt from the heat below
Once the cheese begins to soften, place apples and tomatoes on top of the slice with cheddar
Using a spatula, flip the side with the pepper jack onto the other side and press for one minute
Ensure that both sides are golden brown, remove from pan and place onto cutting board
Cut in half and enjoy the cheesiness!
Serve with your favorite side of fruit, potato salad, or whatever your heart desires
Bonus: it’s an easy recipe to tackle for those of us who aren’t necessarily cooking savvy.
Mini Pumpkin Donuts with Green Icing Recipe
This is the perfect pumpkin donut recipe to bring a little Halloween Horror Nights to your home. Not only are they deliciously pumpkin flavored, they’re also mini and very cute!

Makes 24 Mini Pumpkin Donuts
Ingredients:
1 cup sugar
4 teaspoons baking powder
1 1⁄2 teaspoons salt
1⁄2 teaspoon nutmeg
¼ cup of pumpkin pie spice
2 eggs
1⁄4 cup unsalted butter, melted
1 cup milk
4 cups flour (plus a little more if dough is sticky)
Vegetable oil (for frying)
Green icing or white icing + green food coloring (from local grocery store for topping)
Directions:
In a large bowl mix the sugar, baking powder, pumpkin pie spice, salt, and nutmeg together.
Add eggs, milk, and melted butter. Beat well.
Add 3 cups of the flour, beating until blended. Add one more cup of flour and beat well. The dough should be soft and sticky but firm enough to handle. If you feel it’s necessary, add up to 1/2 cup more flour.
Cover with plastic wrap and chill for (at least) one hour.
Remove your dough from the fridge and begin heating about 1 inch of oil to 360℉ in a large metal skillet or dutch oven.
Working half the dough at a time, roll it out on a floured surface to about ½ inch thickness.
Cut out circles using a mini donut cutter or small biscuit or cookie cutter, really anything that can give you a mini donut shape.
For the center, I actually use the cap off a soda bottle to cut the holes. (Life hack!)
Gently drop the donuts a little away from you in batches into the hot oil.
As they begin to puff, flip them over with metal tongs and continue to flip a few more times as they cook. They will take about 2-3 minutes in total and will be a lovely golden brown color all over.
Remove donuts from the oil and set them on top of paper towels draped over a plate.
Grab the green icing you purchased from your local grocery store and drizzle over donuts as much as you’d like!
If you’re unable to find green icing, you can mix green food coloring in any white frosting.
For a little more fun, you can even crush up some cookie crumbles and lay the donuts on top to resemble a spooky little pumpkin patch.
