(Photo: Disney Parks Blog)

At the beginning or end of a Walt Disney World Resort vacation, you may need to fuel up with a delicious brunch with your family. Disney Springs is full of so many delicious dining options! These five restaurants that we recommend for brunch at Disney Springs, unless otherwise noted, are are offered every Saturday and Sunday:

(Photo: Disney Parks Blog)

NEW! Maria & Enzo’s: The newest brunch offering at Disney Springs can be found at Maria & Enzo’s. Venture into the renovated airline terminal and discover an elegant buffet of starters that include salumi & cheese, antipasti, pizza, yogurt and assorted pastries. Pair it with one of the classic and contemporary dishes on menu, including French Toast, Poached Hen Egg & Quinoa Kale Salad, NY Strip Steak ‘N Eggs, Farmstead Vegetable Frittata or Spaghetti Alla Carbonara. The prix-fixe affair is $35 per adult and $15 per child (ages 3-9); kids under two eat free. For the ultimate indulgence, you can add on endless mimosas and bellinis for just $15 more.

House of Blues Gospel Brunch: Taking place on Sundays at 10:30 a.m. and 1:00 p.m., the World Famous Gospel Brunch is a one-of-a-kind experience that puts the spotlight on local talent and southern specialties. Traditional and contemporary Gospel songs just may move you to wave a napkin and dance off some of their delicious cuisine (speaking from experience, here), including biscuits & gravy, fried catfish, peel and eat shrimp, chicken & waffles, honey baked ham, roast beef and much, much more.

Paddlefish: Come aboard and enjoy classic brunch favorites like the popular Crab & Asparagus Benedict or the mouthwatering Monte Cristo. Both pair nicely with a glass of the Southern Sangria, a house favorite.

Raglan Road Irish Pub and Restaurant: The Rollicking Raglan Brunch is offered every Saturday and Sunday from 10 a.m. – 3 p.m. and features authentic Irish music, food, drink and live entertainment. With brunch entrees ranging from $8-$26, the menu is brimming with Irish taste treats including the Full Irish Breakfast, Pancakes Diaspora with crème fraiche, maple syrup and berry compote, and Smoked Salmon Potato Cakes, to name a few. STK Orlando: Most days you can order a la carte, and while STK is always known for their superb steaks, it would be a mistake to leave without trying their Cinnamon Monkey Bread.

Pongu Lumpia Recipe from Pongu Pongu in Pandora- The World of Avatar

One of my favorite snacks in Pandora – The World of Avatar at Disney’s Animal Kingdom is Pongu Lumpia, from Pongu Pongu. The Disney Parks Blog recently shared the Pongu Lumpia recipe which has been adapted to be made at home.

On Earth, lumpia is a spring roll of Chinese origin, commonly found as a popular street food snack in Indonesia and the Philippines. It is traditionally a mixture of savory vegetables and chopped meat filling rolled in a spring roll wrapper. However, the Disney Culinary Team developed the version sold at Pandora – The World of Avatar with a sweet spin – cream cheese and diced pineapple.

Pongu Lumpia Recipe (Pineapple Cream Cheese Spring Rolls)
Pongu Pongu, Pandora—The World of Avatar
Disney’s Animal Kingdom

Makes 10 Lumpia

  • 10 spring roll wrappers
  • 1 (8 ounce) package cream cheese, room temperature
  • 2 cups diced fresh pineapple
  • 1/2 cup sugar, divided
  • Oil for frying

1. Line a baking sheet with parchment paper or a silicone baking mat.
2. Carefully separate spring roll wrappers. Cover wrappers with moist paper towel to prevent drying.
3. Cut softened cream cheese into 10 equal pieces.
4. Place one spring roll wrapper on a cutting board. Place one piece of cream cheese in the center of the spring roll and spread evenly on wrapper, leaving a 3/4-inch border around the edges. Add 3 tablespoons of diced pineapple and sprinkle with 1/2 teaspoon of sugar.
5. Roll one edge of the wrapper towards the center. Fold in both sides and continue rolling. Moisten the edge with water to seal the lumpia.
6. Repeat with remaining spring roll wrappers.
7. Place lumpia on prepared baking sheet and freeze for 4 hours or overnight.
8. Preheat 1 inch of oil in a frying pan to 350°F. Fry lumpia for 3 minutes on each side, until golden brown. Drain on paper towels.
9. Roll in remaining sugar before serving.

This recipe has been converted from a larger quantity in the restaurant kitchens.
The flavor profile may vary from the restaurant’s version.
All recipes are the property of Walt Disney Parks and Resorts U.S., Inc.,

Six Things for Couples to Enjoy Without Kids at Universal Orlando Resort

(Photo: Universal Orlando Resort Blog)

Universal Orlando Resort may be known as a family destination, but with a handful of top-notch hotels and a diverse dining and bar scene, it’s also a place primed for couples. Headed there for your a special occasion or just a fun time out together? Here are six things that we think couples will enjoy without kids at Universal Orlando Resort.

Stay at the Hard Rock Hotel

Universal Orlando has five unique hotels to choose from (and a sixth coming in August). But the sexiest of all – and, perhaps more importantly, the one that seems to attract fewer small children – is the Hard Rock Hotel. With its music memorabilia-lined interior and sophisticated boutique vibe, it’s a rock ‘n roll getaway like nothing else.

The 12,000-square-foot pool has regular live music and is equipped with an underwater sound system. The Palm is a great spot for dinner, and the Velvet Bar appeals to the late night crowd looking for a libation or midnight snack. Big fan of rock ‘n roll? Check out “The Sound of Your Stay” program, where the hotel will loan you an electric guitar or bass to jam out during your stay, or let you borrow a turntable with a selection of records.

In between exploring the theme parks and enjoying the pool, you can browse the hotel’s music memorabilia, all artfully woven into the interior design plan.

Pro Tip: Plan your visit to overlap with the last Thursday of the month from January through October, then book your ticket for a Velvet Session. The lobby of the hotel is transformed into an intimate live music venue where world-famous bands come to play.

Get an Exclusive Tour of the Parks

Want to experience Universal Orlando  just the two of you with a private tour guide? Book a VIP Experience, and you’ll be assigned a personal guide to escort you through the parks. You’ll get exclusive perks like private entrances at attractions throughout Universal Studios Florida and Universal’s Islands of Adventure, gain insider information and see parts of Universal that many park-goers never get to see.

Pool Hop Around the Resort

(Photo: Universal Orlando Resort Blog)

If you’re staying on-site at one of the Universal Orlando’s hotels, you can use the other hotels’ amenities, too. Take advantage of that and spend the day hopping from hotel to hotel. Check out Loews Sapphire Falls Resort‘s water slide, Cabana Bay Beach’s 50s retro poolside fun, Loews Royal Pacific Resort‘s sparkling lagoon and the private, adults-only pool at Loews Portofino Bay Hotel.

Get Your Pamper On

(Photo: Universal Orlando Resort Blog)

What better way to signal you’re on a real vacation than checking into Mandara Spaat Loews Portofino Bay Hotel for a couples’ treatment? The Italian-inspired property conceals a 13,000-square-foot spa that’s outfitted with 14 private treatment rooms, two couples’ rooms, a hydro-therapy pool and more.

Go Out on the Town

(Photo: Universal Orlando Resort Blog)

One of the many perks of staying on-property at Universal Orlando is the easy access to Universal CityWalk, which is a quick stroll from the Hard Rock Hotel.

There, you can sip margaritas at Antojitos Authentic Mexican Food, indulge in a feast for your taste buds at The Toothsome Chocolate Emporium & Savory Feast Kitchen, and finish the night taking the stage at Rising Star, where a full band backs your karaoke efforts.

Embrace Your Inner Child

(Photo: Universal Orlando Resort Blog)

So you don’t have children? That doesn’t mean you can’t be the kid yourself – at least for a short time. You’re on vacation now: Lower your inhibitions, order that Waturi Fusion ice cream at Universal’s Volcano Bay and let loose while you soak up hours, if not days, of theme park fun with your significant other in tow.

Have you enjoyed Universal Orlando Resort as a couple? Share with us what some of your favorite things to do together during your visit.

Where to Find the Best Pizza at Disney World

(Photo: Disney Parks Blog)

Most families love pizza and can usually agree on some cheesy goodness for dinner. Even on vacation, the kids may want some pizza for dinner. The good news is that you can find pizza just about anywhere at Walt Disney World parks and resorts! Here are some of our favorite places to get pizza at Disney World.

(Photo: Disney Parks Blog)

Walt Disney World Resort has some tasty pizzas – like at the popular Pizza Window at Disney’s BoardWalk. Connected to Disney’s BoardWalk Inn and just a short stroll from Disney’s Yacht & Beach Club Resorts and the Walt Disney World Swan and Dolphin Hotels, this delicious walk-up window serves classics like cheese and pepperoni, but you should also check out the BoardWalk Signature Pizza. This pizza comes loaded with Italian sausage, onions, peppers and balsamic glaze. The BoardWalk is also the perfect place sit back, relax and eat your pizza while you enjoy a breezy and sunny afternoon.

(Photo: Disney Parks Blog)

At Disney’s Yacht Club Resort, the recently opened Ale & Compass Restaurant boasts some delicious New England-inspired Hearth Oven Pies, including a seasonal market vegetable pie, a caramelized leek and chorizo pie, and a white clam pie. And if you’re having breakfast here, you can also order a Breakfast Pie with a sunny side-up egg, house-made bacon, ham, provolone and arugula.

(Photo: Disney Parks Blog)

If you’re at Epcot, it’s just a quick walk around the World Showcase to Italy, where you’ll find Via Napoli Ristorante e Pizzeria. Here you can order authentic Neapolitan thin-crust pizza made with fresh mozzarella, San Marzano tomatoes and real Caputo flour imported from Southern Italy.

(Photo: Disney Parks Blog)

At Disney Springs, there’s now several different options to get your pizza fix! One being the popular Blaze Fast-Fire’d Pizza where you can order guest favorites like the Red Vine pizza with Ovalini mozzarella, cherry tomatoes, parmesan, basil, red sauce and olive oil drizzle, or the Green Stripe pizza with pesto drizzle over chicken, red peppers, garlic, mozzarella and arugula. You can also try the pizza at Wolfgang Puck Express, where you can even find breakfast pizzas with scrambled eggs, bacon, mozzarella, cheddar and caramelized onions in addition to their regular pizza menu. On the lunch and dinner menu, you’ll find unique and delicious options like the Pepperoni Pomodoro pizza with caramelized onions, basil and parmesan or the Chicken Meatball pizza with mushrooms, red onion and ricotta. Also at Disney Springs is the recently-opened Pizza Ponte, where you can find Sicilian-style pizza by the slice.

And that’s not even the beginning of all of the pizza you can find at Disney Parks! There are so many other options like Pizzafari at Disney’s Animal Kingdom Theme Park or specialty pizzas at Trattoria al Forno at Disney’s BoardWalk. No matter where you are, you’re sure to find a pizza that’s just right for you.

Where do you like to order pizza at Disney World?

New Incredibles Float Joins Paint the Night Parade at Disney California Adventure

(Photo: Disney Parks Blog)

The fan-favorite “Paint the Night” parade at Disney California Adventure park is currently dazzling audiences during the limited-time Pixar Fest at the Disneyland Resort. This electrifying parade uses more than 1 million brilliant lights, high-energy music and cutting edge special effects featuring many beloved Disney and Pixar pals. A new Incredibles float will be added to the Paint the Night Parade at Disney California Adventure Park on June 23, 2018.

Joining “Paint the Night” on June 23 is a new float inspired by Disney•Pixar’s “The Incredibles” and “Incredibles 2.” The Parr family and their pal Frozone will make their debut in this spectacular parade with high-tech, pop-art effects.

Here’s how the fun and excitement of The Incredibles float will be brought to life:

  • The dynamic and colorful new float connects both “The Incredibles” and “Incredibles 2,” picking up where the first film left off and portraying the scene that shows the Parr family banding together against the supervillain known as “The Underminer.”
  • Violet Parr uses her super powers to surround herself with a “force field.” It will come to life through a custom-built persistence-of-vision (POV) globe – the first and largest ever to be installed on a Disney parade float.
  • Dash’s super-human speed is captured through an innovative system of 64 individually lit frames, flashing as he races in circles around the float.
  • Mr. Incredible and Mrs. Incredible, along with their pal Frozone, light up the night in new super suits. The suits have been installed and wired by hand and are fully programmable to be in sync with the music and the float lighting.
  • The super suits, designed by eccentric fashion designer Edna Mode, are illuminated with nearly 100 sheets of flexible, miniature LEDs. This is the first time these light-up suits will be worn by any Disney or Pixar character.
  • The chest logos on the Incredibles’ glowing super suits are made up of 60 individually programmable LEDs.

This “super” float joins “Paint the Night” this summer during Pixar Fest, the limited-time celebration happening now through September 3. Pixar Pier will also welcome guests at Disney California Adventure park on June 23.

Be sure to catch “Incredibles 2” in theaters now!

Pixar Pier to Include Four Neighborhoods Inspired by Pixar Stories

(Photo: Disney Parks Blog)

When Pixar Pier opens later this summer in Disney California Adventure park, guests will find four whimsical neighborhoods inspired by beloved Pixar stories. Here’s a bit more detail on what to expect at Pixar Pier!

Incredibles Park – Inspired by “The Incredibles,” Incredibles Park will be an inviting plaza featuring mid-century modern design aesthetics. Guests will enter through an archway where the iconic Incredibles logo will be seen overhead. Once inside, the new Incredicoaster will take you on a thrilling race alongside the Parr family. A combination of character figures, lighting, music and special effects will bring all the action to life! Upon exiting the attraction, the Jack-Jack Cookie Num Nums stand will tempt guests with freshly-baked treats.

Toy Story Boardwalk – Adjacent to Incredibles Park, Toy Story Boardwalk will be themed to “Toy Story.” Guests will be shrunk down to the size of a toy on the fan-favorite Toy Story Midway Mania! Jessie the yodeling cowgirl will invite you for a rootin’ tootin’ spin on Jessie’s Critter Carousel (opening in 2019). At Poultry Palace, big appetites and small fries alike can enjoy a fun meal inspired by Pixar’s short, “Toy Story Toon: Small Fry.” There will even be a fun-sized Zurg—perfect for photo ops! You can also stop by Señor Buzz Churros, where Buzz has switched into Spanish mode to offer this classic treat. ¡Delicioso!

Pixar Promenade – This charming seaside promenade inspired by classic turn-of-the-century California boardwalks will celebrate the heartwarming stories and beloved characters from all of Pixar’s films. The focal point of Pixar Promenade will be the Pixar Pal-A-Round. This reimagining of a guest favorite will still include the iconic face of Mickey Mouse on the Paradise Bay side of the wheel. But now, each of the 24 gondolas will feature different pairs of Pixar pals!

Pixar Promenade will also feature the Games of the Boardwalk, offering guests a chance to test their skills and win a prize. The four colorful game booths will include Heimlich’s Candy Corn Toss, Wall-E Space Race, La Luna Star Catcher and Bullseye Stallion Stampede. Also featured along the promenade will be a classic band-shell stage, ideal for musical entertainment acts and encounters with your favorite Pixar characters. Bing Bong’s Sweet Stuff will feature delightful confections, including saltwater taffy and rainbow cotton candy. For some savory bites, head over to Angry Dogs, where the dogs heat up as Anger from “Inside Out” burns with rage!

Inside Out Headquarters – Located on the western end of the pier, the lush and colorful area inspired by “Inside Out” will be known as Inside Out Headquarters. This playground for the emotions will feature a whimsical family-friendly attraction, scheduled to open at a later date.

(Photo: Universal Orlando Resort Blog)

If you have dinosaur loving kids, they probably dream of walking amongst dinosaurs after watching the Jurassic Park films. It can became reality when they ride Jurassic Park River Adventure and visit the Jurassic Park Discovery Center at Universal’s Islands of Adventure. Plus, there’s now a new Jurassic World experience for kids to enjoy at Universal Orlando Resort.

The carpet will help guide them as it looks like the valley map with trail markings the gyrospheres followed. And the bedding is made to look like a test tube that was used to create new species of dinosaurs just like in Jurassic World. I wonder which new dinosaur species they’ll come up with in the new Jurassic World: Fallen Kingdom movie…

(Photo: Universal Orlando Resort Blog)

The kids’ suites sleep up to five with one king bed, two twin beds and an option for a rollaway bed. Mom and dad can have a little privacy, while kids can have some fun in their own attached themed room. The kids’ room only opens into the adults’ room, connected via a door modeled after the dinosaur enclosure.

(Photo: Universal Orlando Resort Blog)

Now, you can take a prehistoric adventure 65 million years in the making by experiencing Jurassic Park inside Islands of Adventure and have your kids sleep among the dinosaurs in these new Jurassic World kids’ suites.
